Meatless Monday

I’ve reduced the amount of meat I eat To just 2-3 meals per week and I love quinoa as a clean and healthy source of protein. Here is a lovely recipe that I found on Pinterest as a quick and easy Monday night recipe. Tonight I’ll be having mine with roasted plum tomatoes. Of course mine will be made with gluten free breadcrumbs. Enjoy!
